Italian Cuisine
Pasta ingredients:
- 1 packet whole wheat
large pasta.
- 1 whole oven grilled
chicken, pulled from the bones.
- 1 packet Baby
Asparagus, finely chopped.
- 1 large green
capsicum, finely diced.
- 1 large red capsicum,
finely diced.
- 1 small red onion,
finely diced.
- Parmesan shavings.
Dressing ingredients:
- Juice of 1 lemon.
- 1 tbsp olive oil.
- 1 tbsp mustard.
- 1 tsp apple vinegar.
- 1 small red chilli,
finely chopped.
- ½ tsp salt.
- ¼ tsp black Pepper.
Directions:
- Cook the Pasta till
Al-dente. Drain and set aside, without washing or rinsing.
- Meanwhile, in a large
bowl combine all chopped vegetables together with the pulled chicken pieces and
set aside.
- Prepare dressing by
mixing all ingredients together till emulsified or not separated.
- Add the cooked pasta
to the rest of the ingredients in the large bowl and pour over the dressing.
Stir to coat all.
- Transfer to serving
plates, sprinkle each with Parmesan shavings, or sprinkle with finely chopped
parsley if preferable.
