Ingredients:
- 2 cups white whole-wheat flour.
- 1 ½ tsp baking soda.
- ½ tsp salt.
- 2 large overripe bananas.
- 1 cup brown sugar.
- ¾ cup (1 ½ sticks) unsalted butter,
melted and cooled.
- 2 eggs.
- 1 tsp pure vanilla extract.
- ½ cup pecans, chopped.
Directions:
- Preheat oven to 375 degrees.
- Using a standup mixer, mash
together bananas, eggs, vanilla and sugar until is cam a melted butter.
- Add the dry ingredients, flour,
baking soda and salt.
- Once combined toss in half the
pecans. Don’t over mix.
- Use an ice cream scoop to make
evenly distributed muffins.
- Top with the remaining pecans.
- Bake for 20 to 25 minutes.
