Victorian Orange Peel Cake

Ingredients:
- 3 large orange peelings.
- 1 cup of sugar.
- 125 ml butter.
- 1 cup of raisins.
- 2 cups flour.
- 1 tsp baking powder.
- 125 ml walnuts chopped.
- 2 eggs.
- 500 ml milk.
Orange syrup ingredients:
- ½ cup of sugar.
- 250 ml fresh orange juice.
- 30 ml dark rum.
Orange syrup directions:
- In a cooking pan heat the orange juice, sugar and rum together till all the sugar is completely dissolved.
- Put the syrup aside.
Orange peel cake directions:
- Wash then peel the oranges, remove the white pith from the peeling because that’s the bitter part of the orange.
- Place the peelings and the raisins in a food processor, mix till they are finely chopped.
- Preheat the over to 160 degrees.
- In a mixing bowl cream the sugar and butter together.
- Add in the beaten eggs and milk then mix in thoroughly.
- Fold in the flour and baking powder into the batter using a wooden stick.
- Mix in the raisins, the peels and the walnuts in to the mixture and mix thoroughly.
- Make sure the mixture is without any lumps.
- Pour out the mixture in a greased baking tray and bake for 45 to 50 min in the oven.
- When the cake is done let it stand for 10 minutes, then remove the baking tray. Turn the cake slowly and place on a serving platter.
- Using a table spoon sprinkle the orange syrup on the cake.
- Allow the cake to rest for 20 minutes to absorb the syrup, than it is ready to serve.
