Ingredients:
- 1 kg medium-sized shrimp, peeled.
- 3 small onions, sliced.
- 2 small red chili peppers, sliced.
- 2 tbsp chopped parsley.
- 1 tbsp chopped coriander.
- 1 bay leaf.
- 2 tbsp lemon juice.
- 2 tbsp olive oil.
- ¾ tsp ground cumin.
- 1 tsp salt.
- ¼ tsp ground black pepper.
Directions:
1. Wash the shrimp thoroughly, remove the dark vein along their backs, and drain them completely in a colander.
2. Add all the other ingredients to the shrimp and mix well.
3. Preheat the oven to a moderate temperature.
4. Spread the shrimp mixture in a large baking dish and cover with foil.
5. Place the dish on the middle rack of the oven and bake for 15 minutes, or until the shrimp are cooked through and have a medium orange color. Serve.
