Ingredients:
- 4 large sweet potatoes, cut into thick cubes.
- 2 large carrots, cut into thick slices.
- 1 medium onion, finely diced.
- 6 cups hot vegetable stock.
- 1 tsp paprika.
- 1 tsp salt.
- ½ tsp black pepper.
- ½ tsp seven-spice mix.
- ¼ tsp ground cardamom.
Directions:
1- Pour the hot vegetable stock into a medium saucepan and bring to a boil over high heat for 2 minutes, or until well boiled.
2- Add the sweet potato, carrot, and onion pieces to the boiling water. Cover the pot and cook for 15 minutes, or until the vegetables are tender.
3- Add the paprika, allspice, salt, black pepper, and cardamom to the soup and stir well. Cover the pot and cook for 6 minutes, or until the ingredients are fully cooked.
4- Blend the soup with an immersion blender or in a food processor until smooth and have a medium consistency.
5- Cover the soup and simmer for 2 minutes, or until it comes to a boil and serve.
