Ingredients:
- 5 small carrots, peeled.
- 3 tbsp parsley leaves, finely chopped.
- 2 large garlic cloves, peeled and cut in half.
- 2 tbsp lemon juice.
- 2 tbsp vinegar.
- ½ tsp salt.
Directions:
1- Put the carrots in a small saucepan and cover well with a boiling water, then add the garlic cloves, vinegar and salt.
2- Cover the pot, put it on a medium heat and leave it for 10 minutes or until the carrots are boiled and softened, then remove the pot from the heat.
3- Drain the carrots, set aside to cool down, then cut them into a round slices of medium thickness.
4- Place the carrot slices in a serving bowl, mix with chopped parsley and lemon juice, then serve it warm.
