Turkish pastry rolls filled with meat and ricotta cheese

Ingredients:

- 220g (7 ½ oz) minced lamb meat.
- 250g (8oz) ricotta cheese.
- 4 filo sheets, cut into strips.
- 1 small onion, finely chopped.
- 2 garlic cloves, finely chopped.
- 3 tbsp parsley, finely chopped.
- 2 tbsp olive oil.
- ¼ tsp ground black pepper.
- ¼ tip chilli flakes.
- 1 egg, whisked.
- 2 tsp nigella seeds.

Directions:
1 - Preheat the oven to 180°C.

2 - Heat the oil in a pan and stir-fry the onion for 3 minutes until soften.

3 - Add the lamb meat and stir for 5 minutes until is just cooked through.

4 - Add the garlic and fry for 1 minute.

5 - Remove the mixture from the heat and tip into a bowl.

6 - Add the parsley, black pepper, chilli flakes, ricotta cheese and salt; mix it well.

7 - Take a strip of filo, put 1 tbsp of filling from one of the corners, then keep folding into smaller triangles.

8 - brushing with egg wash, to enclose the filling. Repeat with the remaining ingredients.

9 - Place on a lined baking tray, brush with egg wash and scatter over the nigella seeds.

10- Bake for 15 to 20 minutes until golden.

11- Serve with Greek yogurt.
