Ingredients:
- 250 g butter, softened.
- 1 tsp vanilla extract.
- 1¼ cup caster sugar.
- 3 eggs.
- 2¼ cup self-raising flour.
- ¼ cup plain flour.
- ¾ cup milk
- 2 tsp icing sugar.
Directions:
1- Preheat oven to 180°C/350°F.
2- Grease a deep 20cm (8-inch) square cake pan, and line base and sides with baking paper.
3- Beat butter, vanilla and sugar in a medium bowl with an electric mixer until light and fluffy.
4- Beat in eggs, one at a time.
5- Stir in sifted flours and milk, in 2 batches.
6-Spread mixture into pan, and smooth the surface.
7- Bake the cake for 1 hour.
8- Leave the cake in pan for 5 minutes before turning, top-side up, onto a wire rack to cool.
