Ingredients:
- 2 ripe avocados, stoned, peeled and chopped
- 1 lemon, rind and juice
- 600 ml vegetable stock
- 2 tomatoes, skinned, de-seeded and chopped
- 1 green pepper, de-seeded and chopped
- 1 red pepper, de-seeded and chopped
- 1 cucumber, chopped
- 2 garlic clove, crushed
- ½ tsp salt
- ½ tsp freshly ground black pepper
Directions:
1- Place the avocados, vegetable stock, lemon rind and juice into a food processor and blend to a thin purée.

Directions:

2- Pour into a large bowl and set aside.
3- Place the tomatoes, cucumber, peppers, garlic, salt and black pepper into a food processor then blend to purée.
4- Add the tomato mixture to the avocado puree and mix thoroughly.
5- Cover and chill for 1 hour, then serve.
