Bacon grilled cheese sandwich

Ingredients:
- 4 slices back bacon
- 8 thick slices multigrain bread
- 4 slices Cheddar cheese
- 1 tomato, thinly sliced
- 1 small onion, cut in ½ inch thick rounds
- 1 tbsp olive oil
- 1 pinch of salt
- 1 pinch of pepper

Directions:
- Brush onion with 1 tsp of the oil, and sprinkle with salt and pepper.
- Place the onion and the bacon on greased grill over medium-high heat. Close the lid and grill, and turning occasionally about 6 minutes, or until bacon is warmed through, and onion is softened.
- Top 4 of the bread slices with Cheddar cheese, bacon, tomato, onion and the remaining bread.
- Brush both sides of sandwiches with remaining oil.
- Grill over medium heat; covered and turning once, until cheese is melted, about 5 minutes.
