Cherry bomb & jalapeno meatballs

Meatballs ingredients:
- 500g grond beef. 
- 1 large egg.
- ½ cup breadcrumbs.
- 1½ tsp salt.
- 1½ tsp sweet paprika powder.
- ½ tsp onion powder.
- 1 tsp black pepper.
- ½ tsp ground nutmeg.
- 1 tsp brown sugar.
- ¼ tsp garlic powder.
- 1 tsp dried parsley.
- A pinch of cayenne pepper.

Glaze ingredients:
- ½ cup brown sugar.
- ½ cup Cherry Bomb (alcohol cocktail with orange juice).
- 3 jalapeƱos, sliced.

Garnish ingredients:
- Mozzarella cheese.
- A few rocket leaves.

Directions:
- Preheat the oven to 200C and line a baking sheet with parchment.
- Mix all of the ingredients for the meatballs together with the mince, until well combined.
- Using a medium-sized ice cream scoop, make evenly sized meatballs from the mixture, and place on the baking sheet.
- Place the meatballs in the oven for 15 minutes.
- In the meantime, make the glaze by combining the sugar with the jalapeƱos in a heavy-bottomed saucepan set over a medium-high heat.
- Add ½ cup of the Cherry Bomb and bring to the boil, for about seven to 10 minutes. Remove from the heat and set aside.
- Flip the meatballs and return to the oven for another 10 minutes.
- Remove the meatballs from the oven, brush with the glaze, crumble a little mozzarella cheese on top, and then return to the oven for a final 7 minutes.
- Garnish with rocket leaves. Serve hot.
