Mexican cuisine
Ingredients:
- 1 can (15 oz) black
soy beans.
- 1 ½ cups shelled
edamame.
- 1 can (15oz) garbanzo
beans.
-¾ cup shredded carrots.
-¾ cup diced celery.
- 1 red bell pepper,
diced.
-½ cup extra-virgin olive
oil.
-½ cup lemon juice.
- 1 tsp cumin.
- 1 tsp coriander.
-½ tsp minced garlic.
- ½ tsp salt.
- ¼ tsp pepper.
Directions:
- Rinse beans in a
colander.
- Combine vegetables and
beans in bowl.
- Mix oil, lemon juice,
seasonings and garlic in a separate bowl.
- Add to the beans and
vegetables.
- Let sit in the
refrigerator to infuse flavors.
- Salt and pepper to
taste.
