Ingredients:
- 2 ¾ cups all-purpose flour.
- 1 tsp baking soda.
- ½ tsp baking powder.
- 1 cup unsalted butter, softened.
- 1 ½ cups granulated sugar.
- 1 egg.
- 1 tsp vanilla extract.
- Seedless raspberry jam.
Directions:
1- Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.
2- In a bowl, whisk flour, baking soda, and baking powder.
3- In a separate bowl, beat butter and sugar until light and fluffy.
4- Add the egg and vanilla extract to the butter mixture and continue beating.
5- Gradually add the flour mixture to the butter mixture, continue to mix until a smooth dough forms.
6- Shaped the dough into a cylinder by hand, then place the dough cylinder in a biscuit forming machine, formed a small cookies with a cavity in the middle, and place a small amount of jam in the middle cavities.
7- Bake for 8 to 10 minutes until edges are lightly golden. Let cool on a wire rack.
