Cheddar Jalapeño Pies

Ingredients:

- 2 ½ cup all-purpose flour.
- 1 ½ cup cheddar cheese, shredded.
- 1 ¼ cup buttermilk.
- ½ cup cold butter, cut into small cubes.
- 2 large fresh jalapeño peppers, seeded and finely chopped.
- 1 tbsp baking powder.
- 1 tsp salt.
- ½ tsp sugar.

Directions:
1- Preheat oven at 415°F. Line the bottom of a large baking sheet with parchment paper.

2- Mix the flour, baking powder, salt, and sugar in the food processor on high speed for a few seconds.

3- Add the butter cubes to the flour mixture. Beat continuously several times, then on high speed for 1 minute, or until the butter disappears into the flour.

4- Pour the mixture into a large bowl, add the chopped jalapenos and grated cheese, and mix well until combined.

5- Add the buttermilk to the mixture and knead by hand until it forms a dry dough.

6- Sprinkle a little flour on the table surface and in your hands. Pour the dough and gather the dry lumps, pressing them down until it forms a large, thick, firm rectangle

7- Cut the dough into circles using a large round cutter. Then, gather the remaining dough again and cut into circles until the dough is finished.

8- Arrange the dough circles on the prepared baking tray, leaving space between them, and brush them with buttermilk using a small brush.

9- Place the tray on the middle rack of the oven and bake for 15 minutes, or until the pies are cooked through and golden brown on top.

10- Remove the pies from the oven, let it cool, and serve.
