Ingredients:
- 2 lb small potatoes.
- 1 ½ tsp salt.
- Oil for frying.
Directions:
1- Soak the potatoes in a large amount of cold water for 5 minutes, to remove the starch from them, then wash it well.
2- Place the potatoes and salt in a medium-sized pot, add a lot of water until it’s well covered, then boil them over high heat for 7 to 9 minutes.
3- Drain the potatoes well, peel them, arrange them on a large tray, and leave them in the refrigerator for 30 minutes or until dry.
4- Heat the oil in a deep-frying pan over high heat, fry the potatoes in batches, and stirring until they turn golden colour.
5- Remove the potatoes from the oil, leave them for a few minutes on the paper to get rid of excess oil. Serve them hot.
