Cucumber pickled oriental style

Ingredients:

- 2 lb large cucumbers.
- 1 medium-sized carrot, grated.
- 7 large garlic cloves, finely chopped.
- 2 large red hot peppers, chopped.
- ½ cup vinegar.
- 2 tbsp salt.
- ½ tsp ground chili pepper.

Directions:
1- Cut the cucumbers lengthwise into 4 long fingers, and spread them in a large plastic box.

2- Add grated carrots, minced garlic, hot pepper, vinegar, salt, and chili, and rub it by hand until well seasoned.

3- Cover the box tightly, and leave it in the refrigerator for 2 to 3 days or until the pickled cucumbers are soft well, then serve.
