Ingredients:
- 100 g (3½ oz) smoked salmon.
- 500 g (1 lb) boneless and skinless salmon fillet, cut into Small pieces.
- 125 g (4½ oz) panko breadcrumbs.
- 1 tbsp dill, chopped.
- 2 tbsp juice lemon.
- 4 tbsp mayonnaise.
- 2½ tbsp corn oil.
- ¾ tsp salt.
- ¼ tsp ground black pepper.
Directions:
1- Place the smoked salmon in a food processor and chop for a few moments until roughly chopped.
2- Add the remaining burger ingredients, except the oil, to the smoked salmon.
3- Chop again for a moment until the mixture has come together but still has texture.
4- Shape into eight patties.
5- Heat the oil in a large non-stick frying pan over a fairly low heat, add the burgers and fry for 3 to 4 minutes on each side, until golden and cooked through.
