Grilled chile lime chicken skewers

Ingredients:

- 4 boneless skinless chicken breasts.
- ¼ cup olive oil.
- 2 tbsp lime juice.
- 1 tbsp lime zest.
- 1 ½ tsp salt.
- 1 ½ tsp garlic powder.
- 1 tsp chili powder.
- ½ tsp coriander powder.
- ½ tsp black pepper.

Directions:
1- Place chicken breasts between layers of baking paper and pound to an even thickness.

2- Slice chicken breasts lengthwise into 1½-inch slices.

3- Mix all the other ingredients in a deep bowl, and marinate the chicken slices in it.

4- Cover the bowl with cling film, and leave it in the refrigerator for an hour.

5- If using wooden skewers, soak them in water for 15 minutes to prevent them from burning too quickly on the grill.

6- Preheat the grill to medium-high heat.

7- Thread the chicken slices evenly onto the skewers

8- Place the chicken skewers on the grill over medium-high heat. Cook for about 5 to 6 minutes, brush with the marinate sauce, turn and cook for another 5 to 6 minutes until the chicken is golden brown and cooked through.

9- Place chicken skewers on a clean plate and cover with aluminum foil. Let rest for about 5 minutes and serve.
