Baked Onion Rings

Ingredients:

- 3 large onion, cut into slices about ½ inch thick.
- 2 cups btermilk.
- 2 cups flour.
- 3 eggs, beaten.
- 1 cup plain bread crumbs.
- ½ cup panko crumbs.
- 1 tsp salt.
- ½ tsp 
mustard powder.
- ½ tsp crushed red pepper flakes.

Directions:
1- Preheat oven to 250°.

2- Set up an assembly-type line with 4 bowls: buttermilk, flour, egg, and the bread crumb & spice mixture in each, respectively.

3- Spray 2 cookie sheets with olive oil spray.

4- Dip each onion ring into buttermilk, then flour, then egg, then crumbs & spices.

5- Place onto prepared sheets, and spray the rings generously with olive oil.

6- Bake for 15 to 20 minutes or until golden and crunchy.
