Ingredients:
- 4 medium potatoes, cut into medium cubes.
- 1 small sweet green pepper, cut into short strips.
- 1 small sweet red pepper, cut into short strips.
- 1 green onion, cut into thin slices.
- 3 cornichons pickles, cut into small cubes.
- 2 tbsp chopped parsley leaves.
- 3 tbsp olive oil.
- 1 cup hot water.
- 1 tsp paprika.
- ½ tsp turmeric.
- ½ tsp salt.
- ½ tsp white pepper.
Directions:
1- Put the potato cubes in a large frying pan, add hot water, paprika and turmeric. Leave on high heat for 6 minutes or until it boils and most of the water has evaporated.
2- Reduce the heat to medium. Add the oil, colored pepper slices, salt and white pepper to the potatoes, and stir the ingredients well.
3- Stirring the mixture from time to time, for 3 minutes or until it is well cooked and the potatoes are slightly browned.
4- Pour the potato mixture into a large bowl, add the green onion, cornichons pickle and parsley into and stir well, then serve.
