Ingredients:
- 1 lb penne pasta, boiled and drained.
- 1 small red onion, finely chopped.
- 1 large green hot pepper, seeded and finely chopped.
- 1 ½ cup tomato juice.
- 3 tbsp tomato paste.
- 3 tbsp olive oil.
- 1 ½ tsp salt.
- 1 tsp ground dry thyme.
- ½ tsp ground oregano.
- ¼ tsp ground black pepper.
Directions:
1- Heat the oil in a medium-sized saucepan over a medium heat, add the chopped onions and saute for 4 minutes or until softened.
2- Add the chopped hot pepper to the onion, and stir the mixture for a minute or until the pepper smell appears.
3- Add the tomato juice and paste, salt, thyme, oregano and black pepper to the onion mixture and stir well. Cover and leave it to boils.
4- Reduce the heat, and let the sauce boil for 5 minutes or until it thickens a little.
5- Add the pasta to the tomato sauce and stir well. Cover and simmer on low heat for 2 minutes or until it is well heated.
6- Pour into a serving dish and serve immediately.
