Homemade tomato ketchup

Ingredients:

- 12 big tomatoes, peeled and chopped.
- 2 big apples, peeled, cored and chopped.
- 2 big onions, chopped.
- ¾ cup brown sugar.
- ¾ cup cider vinegar.
- 1 ½ tsp sea salt.
- ¼ tsp cayenne.
- ¼ tsp black pepper.
- ¼ tsp allspice.
- ¼ tsp cloves.

Directions:
1- Place all the ingredients in a saucepan. Bring to a boil and summer on low-heat for about 40 minutes, stirring regularly to avoid sticking, until it has the consistency of ketchup.

2- Leave to cool for 10 minutes, then blend to a smooth puree.

3- If the consistency is a bit thin, return to the saucepan and cook to reduce further, but remember, it will thicken as it cools.

4- Pour into sterilized glass bottles and store in a cool, dry place, for 3 months.
