Ingredients:
- 1 small red onion, thinly sliced.
- 20 cherry tomatoes, halved.
- 2 cup watercress, roughly chopped.
- 1 cup feta cheese, diced.
- ¼ cup black olives, halved.
- 3 tbsp olive oil.
- 2 tbsp lemon juice.
- 2 tbsp vinegar.
- 2 tbsp fresh basil, thinly sliced.
- 2 tbsp fresh parsley, minced.
- ½ tsp salt.
- ¼ tsp black pepper.
Directions:
1- In a large bowl combine the olive oil, lemon juice, vinegar, basil, parsley, salt, and pepper.
2- Add the onion, tomatoes, watercress, olives and toss to combine.
3- Add the feta and gently toss to combine again.
4- Serve at room temperature.
