Ingredients:
- 2 lb trimmed rack of lamb, cut into chops
- 1 cup dried breadcrumbs
- ¼ cup lemon juice
- 3 tbsp olive oil
- 2 garlic gloves, finely chopped
- 2 tbsp parsley, finely chopped
- 1 tbsp onion powder
- 1 ½ tsp salt
- ½ tsp black pepper
- 1 tsp dried oregano
- 2 lb trimmed rack of lamb, cut into chops
- 1 cup dried breadcrumbs
- ¼ cup lemon juice
- 3 tbsp olive oil

- ½ tsp black pepper
- 1 tsp dried oregano
Directions:
1- Preheat the oven to 210°C.
2- Combine the breadcrumbs, lemon juice, parsley, garlic, onion powder, oregano, salt and pepper in a large mixing bowl until combined.
3- Brush the lamb chops with the olive oil.
4- Sprinkle the breadcrumb mixture on both sides of the lamb chops, packing lightly to make them stick.
5- Arrange the lamb chops on a lined baking tray.
6- Bake for 12 minutes, turning halfway through cooking.
7- Remove the lamb from the oven when ready and allow to rest for 5 minutes.
8- Arrange the lamb chops alongside. Garnish with a sprig of oregano leaves and some freshly ground black pepper before serving.
