Glaze ingredients:
- 1 ¼ cup meat stock
- ¼ cup of honey
- ¼ cup of maple syrup
- 1 tsp chilli powder
- 1 tsp cumin powder
- 1 tsp ground coriander powder
- 1 tsp turmeric powder
Crust ingredients:
- ½ cup ground toasted almonds
- 1 tbsp nigella seeds
- ½ tsp toasted sesame seeds
Lamb ingredients:
- 2 Colorado lamb racks
- 1 ½ tsp salt
- 1 tsp black pepper
Glaze directions:
1- In a medium sauté pan, toast all the spices at a medium temperature.
- 1 ¼ cup meat stock

Lamb ingredients:
- 2 Colorado lamb racks
- 1 ½ tsp salt
- 1 tsp black pepper
Glaze directions:
1- In a medium sauté pan, toast all the spices at a medium temperature.
2- Add the honey and maple syrup and mix through.
3- Add the meat stock and bring to a boil at a high temperature.
4- Reduce the heat and simmer for 20 minutes or until it reaches the desired consistency.
5- Grind all the ingredients for the crust by hand with a mortar and pestle. Set aside.
Lamb directions:
1- Preheat the grill to a high setting and the oven to 200°C.
2- Clean and trim the lamb of all excess fat.
3- Season with salt and pepper and sear on the grill for about 2 ½ minutes on each side.
4- Transfer the racks to a large baking pan and finish in the oven for 15 minutes.
5- Remove the lamb from the oven and allow it to rest for 10 minutes.
6- Brush with the spice glaze, top with the crust, slice into individual chops.
