Turkish spicy tomato salsa

Ingredients:
- 6 ripe tomatoes, peeled and chopped
- 1 large cucumber, grated
- 1 green pepper, finely chopped
- 4 spring onions, finely chopped
- 6 cloves of garlic, crushed to a puree with salt
- 1 tsp grated lemon zest
- 2 tsp paprika paste
- 3 tbsp olive oil
- 1 tbsp pomegranate syrup or lemon juice
- 2 tbsp tomato puree
- ¼ cup parsley, finely chopped
- ¼ cup fresh mint, finely chopped
- 1 tsp sugar
- Salt to taste
- Ground black pepper to taste
- 1 red chilli, finely chopped

Directions:
- Put the tomatoes and cucumber in a sieve, sprinkle with a little salt and place over a bowl for about 30 minutes to drain excess liquid.
- Once the tomatoes and cucumber have drained, pop all of the ingredients into a food processor and give a few pulses to chop and combine - don't reduce it to mush, just give it a short sharp shock.
- Transfer to a serving dish and serve immediately or cover and chill until required.
