Sirloin steak cajun style

Mexican Cuisine

Steak ingredients:
- 4 tbsp rapeseed oil.
- ½ tsp rock salt.
- 2 tbsp Cajun seasonings.
- 4 Sirloin steak (180 g).

Sweet potatoes ingredients:
- 8 large sweet potatoes.
- 2 tbsp canola oil.
- 1 pack Feta cheese, crumbled.
- 1 tsp rock salt.
- ½ tbsp tellicherry black pepper.

Corn salsa ingredients:
- 1 tbsp canola oil.
- 1 can corn, drained.
- 1 piece fresh red chilli, finely chopped.
- 1 tbsp lime juice.
- 4 scallions, finely shredded.
- ¼ tbsp tellicherry black pepper.
- ¼ tbsp rock salt.
- 1 bunch coriander, finely chopped.

Steak directions:
- Mix the oil, salt and cajun.
- Place the steak in a mold and pour over cajun and oil mixture. Turn around so the meat covered by the marinade, let it stand for 30 minutes at room temperature.
- Take up the steaks from the marinade.
- Fry the steaks over medium heat with a little oil in a frying pan, about 3 minutes per side for medium rare or according to taste.

Sweet potatoes directions:
- Preheat the oven to 200 ° C.
- Peel and cut sweet potatoes into 2 cm thick slices.
- Place slices in an ovenproof dish and pour over the oil, salt and pepper. Toast in oven for 40 minutes.
- Remove the potatoes from the oven and crumble feta cheese over before serving.

Corn salsa directions:
- Heat a frying pan on high heat, add oil.
- Add the drained corn and chili. Cooking stirring for 3 minutes or until the corn is golden.
- Remove from heat and add lime juice and allow to cool.
- Stir in the scallions and coriander.
- Season with salt and pepper.
