Poulet Basquaise
Ingredients:
- 1 whole chicken
cutting into 8 pieces.
- 4 yellow and
green peppers.
- 350 g
tomatoes (or peeled canned of tomatoes) cutting into large pieces.
- 250g
mushrooms
- 150g a piece
of smoked pork cutting into small pieces.
- 2 cups white
wine.
- 2 tsp salt.
- shredded red
pepper for garnish.
Directions:
- Fry the smoked
pork in a large heavy saucepan in a little oil until it is golden brown.
- Take up the
pork, raise the temperature and fry the chicken pieces in batches so they are
well browned on all sides.
- Return the
pork into the pan; add all the vegetables, the white wine and the salt.
- Put the lid
on and let it simmer for about 45 minutes.
- Place the
chicken on a plate.
- Raise the
temperature and let the sauce to thicken for a while.

Season with salt and plenty of freshly ground black pepper.

Turn the sauce and vegetables over the chicken and sprinkle with chopped
parsley and finely shredded red pepper.
