Chocolate cake ingredients:
- 200 g dark chocolate all chopped up.
- 175 g unsalted butter.
- ¾ cups of caster sugar.
- 4 eggs.
- 1 cup of self-raising flour, sifted.
- 1 cup (100 g) of almond meal.
- 1 tsp baking powder.
- ½ cup (125 ml) milk.
Chocolate ganache ingredients:
- 300 ml of thick cream.
- 150 g of dark chocolate chopped.
- 2 Cadbury Flakes or a block of chocolate to
grate.
- 2 cartons of mini Corinthian wafers
(Woolworths).
Chocolate cake directions:
- Preheat oven to 160°C.
- Grease and flour cake pan 10 cm deep, or 2 tins to make 2 cakes.
- Place chocolate in a bowl over a pan of
simmering water until melted, making sure the bowl does not touch the water.
- Place butter and sugar in a bowl and beat
with an electric mixer for about 5 minutes or until pale.
- Add eggs one at a time, beating well after
each.
- Fold in flour, almond meal, baking powder,
milk and melted chocolate.
- Pour mixture into cake pan and bake for 45
minutes, or until a skewer inserted in the center comes out clean.
- Cool slightly, then turn out onto a rack to
cool completely.
Chocolate ganache directions:
- Heat cream over low heat, add chocolate and
stir until melted.
- Chill until cooled and thick but still
sticky.
- If you make 2 cakes, use the ganache hold
them together.
- Next, spread ganache over cooled cake,
making sure you have iced all the sides.
Decoration directions:
- Carefully place Corinthian wafers around the
edges of cake, while ganache is still sticky.
- Crumble flake bars on top or grate chocolate
to cover entire top of cake.
