Moroccan Cuisine
Ingredients:
-800 g beef, cubed.
- 2 ½ tbsp Spice Fusion Ras El Hanout.
- 2 tbsp vegetable oil.
- 2 tsp butter.
-600 g sweet potato, cut into large chunks.
- 2 onions, diced.
- 3 cloves garlic
crushed.
- 1 can chopped
tomatoes.
- ½ cup
beef stock.
- ¼ cup each of honey
and raisins.
- salt and pepper to
taste.
- chopped parsley to
garnish.
Directions:
- Ras el hanout is the
quintessential Moroccan spice mixture, it's a blends combination that contain
black peppercorns, mace, nutmeg, ginger, cinnamon, cloves, turmeric bay leaves,
thyme, orris root and galingale or laos root.
- Sprinkle 2 tbsp of Ras
El Hanout over beef pieces, mix thoroughly.
- Place sweet potato on
base of slow cooker.
- Heat butter and oil in
frying pan and cook meat in batches until browned on all sides; remove from pan.
- Sauté onion and garlic
until golden brown; add to slow cooker with beef.
- Add tomatoes, stock
and salt and pepper and sprinkle over the remaining half teaspoon of Ras El
Hanout.
- Cook on High for 2
hours, then Low for 3 to 4 hours.
- Add honey and raisins
and cook for a further 30 minutes.
- Garnish with coriander
or parsley.
