Salmon Ceviche

Ingredients:
- 160 g salmon, skinless & cut into small cubes
- 1 big avocado, peeled & cut into small cubes
- 1 small red onion, cut into thinly slice
- 1 small red jalapeno, deseed & cut into finely slice
- 2 tbsp coriander leaves, finely chopped
- 2 tbsp roast pepper sauce
- 2 tbsp lime juice
- 2 tbsp olive oil
- Sea salt
- Black pepper

Directions:
1- Place all the Ingredients in a metal mixing bowl. Mix well.

2- Season to taste.

3- Place the mix neatly in the centre of the plate, and serve.
