Italian Sausage with Peppers

Ingredients:
- 1 lb ground Italian sausage.
- ½ onion, chopped.
- 2 peppers, cored and sliced, orange and yellow.
- 14.5 oz diced tomatoes.
- 1 tsp thyme.
- 1 tsp tomato paste.
- ½ cup Spanish olives, sliced.

Directions:
- Sauté sausage and onion together until sausage is just browned.
- Core and slice peppers.
- Add to sausage mix and sauté until softened, 5 to 10 minutes.
- Add tomatoes, tomato paste, and thyme, and simmer for 10 to 15 minutes.
- Remove from heat and stir in Spanish olives.
