Ingredients:
- 1 large mullet or similar fish.
- 1 large tomato, diced.
- 1 medium orange bell pepper, diced.
- 1 medium onion, finely chopped.
- 4 large garlic cloves, finely chopped.
- 1 medium red bell pepper.
- 3 ½ tbsp corn oil.
- 2 tbsp lemon juice.
- 1 tsp ground cumin.
- 1 tsp salt.
- ½ tsp chili powder.
- ¼ tsp black pepper.
Directions:
1. Preheat oven to a moderate temperature.
2. Using a sharp knife, cut open the inside of the fish and remove all the entrails. Then, carefully run the knife over the bones until the fish is completely open, like a book. Rinse thoroughly under running water.
3. Place a large sheet of aluminum foil on the bottom of a long baking dish. Pour 1 ½ tablespoons of oil into the foil and coat it well.
4. Place the fish in the dish with the flesh facing up. Tuck the sides of the foil over the fish to create a flattened shape.
5. Drizzle lemon juice all over the fish, making sure to squeeze some inside the head.
6. Mix all the remaining ingredients together well, then spread the mixture over the entire fish. Drizzle with the remaining oil.
7. Place the dish on the middle rack of the oven and bake for 40 to 50 minutes, or until the fish is cooked through, depending on its size.
