Ingredients:
- 1 large eggplant, cut into small cubes.
- 2 tbsp oil.
- 2 tbsp lemon juice.
- 2 tbsp vinegar.
- 1 tbsp soy sauce.
- 1 tsp finely chopped garlic.
- 1 tsp ground cumin.
- ½ tsp ground coriander.
- ½ tsp salt.
- ¼ tsp black pepper.
Directions:
1- Heat the oil in a deep pan over medium heat. Add the eggplant cubes and sauté for 5 minutes, or until softened and lightly browned.
2- Add the vinegar, soy sauce, garlic, coriander, cumin, salt and black pepper to the eggplant, mix the ingredients well together, then leave on the heat, stirring from time to time for 3 minutes or until the eggplant is cooked.
3- Remove the mixture from the heat, add the lemon juice and stir well, then pour it into a serving dish.
