Fish fillets with potatoes and tomatoes

Ingredients:

- 2 lb fish fillets skinless and boneless.
- 6 medium potatoes, cut into thin slices.
- 10 cherry tomatoes, cut in half.
-1 large red bell pepper, thinly sliced.
- ¼ cup black olives, cut in half.

Seasoning ingredients:
- 1 large tomato, grated.
- 1 medium size onion, finely chopped.
- 4 large garlic cloves, finely chopped.
- ¼ cup lemon juice.
- ¼ cup olive oil
- ¼ cup parsley leaves, finely chopped.
- 1 ½ teaspoon salt.
- 1 teaspoon black pepper.
- 1 teaspoon ground cumin.
- 1 teaspoon paprika.
- ½ teaspoon chili powder.

Directions:
1- Mix all the seasoning ingredients in a deep bowl.

2- Arrange the potato slices on the bottom of a large oven tray.

3- Cut the fish fillets in half, and lay them on top of the potatoes.

4- Distribute the seasoning mixture over the entire tray, and spread it over the fish fillets with a spoon until it covered well.

5- Preheat the oven to 250° C.

6- Distribute cherry tomatoes, red pepper slices and olives on the tray.

7- Place the fish tray on the middle rack of the oven, and leave it there for 25 minutes or until the fish and potatoes are well cooked.
