Sweet and Spicy Oven-Baked Chicken Legs (Chinese Style)

Ingredients:

- 1 kg chicken legs, skin on and bone in.

- 1 large tomato, sliced.

- 1 large onion, sliced.

- 4 large garlic cloves, peeled.

- 3 tbsp sesame or corn oil.

- 3 tbsp sweet and spicy chili sauce.

- 1 tbsp hot chili sauce.

- 2 tbsp vinegar.

- 1 tbsp honey.

- 1 tbsp paprika.

- 1 tsp turmeric.

- 1 tsp salt.

Directions:

1. Place all ingredients (except the chicken) in a food processor and process on high speed until smooth and of medium consistency.

2. Spread the marinade mixture over the chicken legs and rub it in well with your hands until they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least one hour.

3. Preheat the oven to a moderately high temperature.

4. Arrange the chicken legs in a large baking dish and cover with foil.

5. Place the dish on the bottom rack of the oven and bake for 40 minutes, or until the chicken legs are cooked through. Remove the foil and bake for another 10 minutes, or until lightly browned.
