Peach Compote

Ingredients:

- 2 lb. peaches, pitted.

- 3 cup boiling water.

- 2 cup sugar.

- 2 tbsp lemon juice.

Directions:

1- Heat the water over medium heat until it boils, then add the peach halves, sugar and lemon juice, stir well, and leave on the fire for 15 minutes or until its skin begins to separate from it.

2- Pluck the peach pieces from the water, and leave them aside until the heat subsides, then gently remove the outer skin of the peaches, and cut them into slices.

3- Place the peach slices in a medium-sized jar, add the warm sugary syrup, close well, and store in the refrigerator.
