Mexican Corn Salad

Ingredients:

- 1 ½ cups sweetcorn, cooked and drained.

- 1 medium cucumber, seeded and diced.

- 1 small red onion, finely diced.

- 1 green chili pepper, thinly sliced.

- 3 tbsp lime juice.

- 2 tbsp cilantro leaves, finely chopped.

- ¼ tsp paprika.

- ¼ tsp chili powder.

-  ¼ tsp salt.

Directions:

1. Combine all ingredients in a large bowl.

2. Cover with plastic wrap and refrigerate for 30 minutes before serving.
